Did you know that there are very several, nearly disparate, coconut macaroon recipes? Neither did I until Seattle Nina and I were talking about making a batch and I poked around on the internet. The batch on the left are with heated egg whites and sugar (EwS). The one on the right have sweetened condensed milk (SCM). I prefer the denseness of the SCM, but the flavor of the EwS (although I would have cut way back on the amount of sugar). Taste test:
